Coconut Kefir
This morning I looked in the refrigerator for an alternative to yogurt. Well, all I had was my Greek Yogurt. I really love the texture and flavor of the Greek Yogurts, however, I am on day 2 of my no dairy kick.
As usual my mind started turning again. I guess that's the old Food Scientist coming to the surface. Ok, Chandra, I think it's creating time again. Among the shelves of the refrigerator, I discovered Almond Milk and Coconut Milk. Which one? Coconut Milk won!! That's right, I made Coconut Milk Kefir.
I heated 1 liter of milk to boiling. Dissolved 5 grams of Kefir powder into 1 cup of cooled milk.
Poor the dissolved Kefir into the pot of cooled milk. Mix well and poor into container to sit for 8 hours or until the milk curdles.
I guess I'll have to wait until tomorrow to drink my Kefir. I almost forgot, after the Kefir has curdled, put it in the refrigerator to chill. ENJOY!!!! Nutrition In The Now!!!

Morning Breakfast
What to eat in the morning can be a blank for some. For me, it's an adventure with food. It's what foods can I combine to make a meal? Well, this morning was no different. I walked into the kitchen, open the refrigerator and retrieved the greens, kohlrabi, turnips and buckwheat pancake mix. The following steps were easy.......
I diced the kohlrabi and the turnips, spread them on a greased baking sheet, sprinkled himalayan salt and a turkish seasoning on top and roasted them in the oven for 15 minutes.

While my roasted tubers were cooking, I made vegetable pancakes. I used buckwheat pancake mix, substituting almond milk for cow's milk and flaxseed flour for eggs. I added wheat germ and hempseed for more texture and nutrition.
I added chopped broccoli to the pancake mixture. All the preparation took about 45 minutes. And I spent about 30 minutes visualizing my combinations. I made enough pancake batter for several meals.
With added arugula, sliced avocados, carrots, sesame seeds and roasted turnips, my pancake had a lot of company on the plate. To complete my breakfast, I added a cranberry, banana, pineapple, coconut milk smoothie which I had made the day before. I usually make enough smoothie for several meals. I only drink 4 oz at a time. I think I hit all the food groups and the colors. Oh I forgot, I added hot vanilla tea to keep me warm. It is 38 degrees outside.
